Ingredients

225g (8oz) wholemeal plain flour
Pinch salt
Pinch dry mustard powder
Pinch celery salt
1 tsp fennel seeds
55g (2oz) butter
150ml buttermilk
1 egg
55g (2oz) grated cheese
Handful walnuts

Handy Hint

Brush tops only with milk or beaten egg, so they will rise evenly. You can also leave out savoury ingredients and add a litte sugar, dates, cranberries etc. for sweet scones.

Method

1. Rub butter into flour, add all dry ingredients and mix together.
2. Stir in the buttermilk and egg to make a scone mix. Adjust if more flour is needed, and add milk if more liquid needed.
3. Pat out the dough so it is 2.5cm (1") thick and cut into rounds. It makes about 8 scones.
4. Put in hot oven, about 180C for 15 to 20 minutes, until golden brown.

Very more-ish. Will stay fresh for a day, but can be frozen at the dough stage and baked later on.
