Ingredients

3/4 cup dark brown sugar
3/4 cup sugar
2 large eggs
1/2 cup oil
1 tsp pure vanilla extract
1 cup plain flour
1 cup wholewheat flour
3/4 tsp baking soda
1 tsp salt
170g chocolate chips or chunks
115g dried cranberries or cherries

Handy Hint

They have some fruit added to make them healthier (don't tell the kids!) They also taste really yummy if made with wholewheat flour.

Method

1. Preheat the oven to 190C. Line 2 baking sheets with greasproof paper.
2. Whisk up the sugar, eggs, oil, and vanilla essence in a bowl until smooth.
3. Mix the flours, baking soda, and salt in another bowl. Gradually stir in the flour mix into the other ingredients. Do not over mix! Finally stir in the chocolate chunks and dried fruit.
4. Wet hands slightly and roll the dough into balls. Space the cookies about 5cm apart on the pans. Bake until golden but still soft in the center, about 12 to 14 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies onto a rack to cool.

Store cookies in a tightly sealed container for up to 3 days.

These cookies are a real winner with my grandchildren, the ultimate comfort food snack! They are gone in no time and washed down with a glass of milk. Bake on Christmas eve and leave one out for Santa!
