Ingredients

Sliced bread
Cheese (any will do but this is a great recipe for using all those left overs from the Christmas cheese board)
Slices of onion, tomato, cucumber (if not vegetarian you can add ham, pepperoni etc too)

Handy Hint

Try to get one sliced item per square with a sufficient covering of the cheese mix to completely hide it.

Method

1. Toast the bread and place in a shallow baking tray, completely covering the bottom. Crust can be trimmed but ensure a snug fitting.
2. Distribute sliced items randomly but not overlapping.
Cover with grated cheese. This can be a mix or made up with mayonnaise (my favourite) or any other moist binding to make a rarebit mix.
3. Place under grill until lightly browned. Cut into small squares and serve.

I first prepared this on the last night of a self-catering holiday as a means of using up odds and end from the cupboard. I have repeated it since in various guises from neatly prepared and served as a savoury course to a thrown together emergency meal for unexpected guests. Infinitely adaptable and quick.
