Ingredients

4 round neck lamb or mutton chops
2 lambs kidneys (cut in half)
2 rashers chopped bacon
4 slices black pudding (chopped)
2 baking sized potatoes (peeled and sliced about the thickness of 2 x 50p pieces stuck together!)
1 diced large carrot
1 diced small onion
1/2 pint stock
Salt and pepper

Handy Hint

Can be done in a slow cooker for best effect. Serve with dumplings.

Method

1. Fry chops, bacon and kidneys.
2. Into a casserole place a layer of potatoes, then a layer of half the cooked meats and black pudding, then a layer of veg. Repeat,ending with a final layer of potato.
3. Place in oven at 165C (325F/Gas mark 4) for 90mins.
4. Remove lid and cook on the highest heat for 30 minutes to brown potatoes.

It's a cheap,filling dish,using a meat that has fallen out of popularity but has loads of flavour.It can be cooked,frozen and reheated.No fat is needed to cook it.We make vast amounts of it in our family,bulk buying the mutton from our local farmer,then freezing for use throughout the winter.To liven it upa little,chopped capers can be added.
