Ingredients1.8 kg (4lb) damsons145 ml (1/4 pint) freshly squeezed orange juice Zest of 1 orange 1.8 kg (4lb) sugar 2 tsp cinnamon Small knob of butter |

Method1. Wash and wipe the damsons, remove stalks.2. Put into a pan with the orange juice and zest and simmer gently until the fruit is soft, occasionally pressing the damsons against the sides of the pan to break open and release the stones. 3. Remove the stones. 4. Test for pectin. Add the sugar and cinnamon, stirring until it has dissolved. 5. Bring to the boil and boil rapidly for about 10 minutes until the jam sets when tested. 6. Remove the remainder of the stones as they rise to the surface. 7. Add butter and stir to remove any scum. 8. Pot and seal while still hot. | |||||||||||||||||||
