Ingredients

2 cups plain flour
1/2-3/4 cup sugar (or less to taste)
1 tsp baking powder
2 tbsp vanilla sugar
2 eggs (separated)
1 3/4 cups whole milk
6 tbsp melted butter
Few drops of vanilla essence OR
1 tsp ground cardamom

Handy Hint

Serve with ice cream and jam, or for a more authentic waffle serve the cardamom waffles with brown cheese and cloudberry preserve.

Method

1. Whisk the egg whites until stiff.
2. Sieve the flour, baking powder and sugar into a large mixing bowl, add egg yolks, melted butter and beat in the milk to make a smooth batter, add vanilla/cardamom. Fold in the whisked egg white.
3. Pour a small ladleful into a buttered waffle iron and leave for two minutes until cooked. (I have two electric ones from Lidl)

I always end up doubling the quantities because my menfolk are very partial to waffles and can eat massive quantities, but the recipe should serve four people.
