Ingredients4 chicken breasts
1/3 cup dry bread crumbs
Pinch salt and pepper
350ml ounces tomato juice
8 spring onions (chopped)
1 tsp ground allspice
1 tsp jamaican chicken spice
Pinch cinnamon
1/4 tsp ground thyme
1/8 to 1/4 tsp ground cayenne pepper |
Handy Hint
Moisten the chicken with water first, before placing in the bag, so that the crumbs will stick to the chicken. |
Method1. In a large food bag, combine the crumbs, salt, and pepper. Add chicken breasts, one or two at a time, and shake to coat. Place chicken on a baking tray that has been sprayed with cooking oil.
2. Place pan in a 230C oven. Bake chicken for 15 minutes; turn chicken over and bake for another 15 to 20 minutes.
3. Combine cooking juices with remaining ingredients and pour over the chicken. Lower oven temperature to 175C. Bake, basting frequently, until chicken is tender and sauce is thick. Add a little water if sauce cooks down too much.
