Ingredients

100g butter
50g caster sugar
100g plain flour
50g ground almonds
50g cornflour
1 pinch of salt

Handy Hint

Make the mixture in batches and keep in the freezer and bake as required.

Method

1.Sift flour, cornflour, almonds and salt together.
2. Cream butter and sugar together till light and fluffy.
3. Add in the sieved flour to make a soft dough.
4. Press the mixture int a 18cm round sandwich tin. Prick with a fork. Pinch the edges with fingers.
5. Bake in the centre of the oven Gas mark 3/170C/325F for30 minutes until pale brown in colour.
6. Leave the shortbread in the tin to cool for 5 minutes. Cut into 8 triangles. Sprinkle with caster sugar.

These shortbread biscuits are delicious and easy to make. A treat for Christmas.
