Ingredients170-225g (dry weight) pasta2 courgettes 1 head of broccoli Tub of soft cream cheese Vegetable oil Salt and pepper Spinach leaves. |
Handy HintDon't overcook the veg as it needs to have plenty of bite! Use flavoured soft cream cheese to vary the dish. |

Method1. Boil the pasta in lightly salted water until almost cooked.2. Meanwhile heat a couple of tablespoons of oil in a large frying pan or wok. Add broccoli (broken into small pieces) and courgette (chopped into approx 2cm/1 inch pieces). Cook fairly hot, tossing around the pan to cook all sides, for around 5 mins. 3. Drain pasta and add to veggies mixing well. Turn down heat and make a well in the centre of the veg/pasta and add a tub of soft cream cheese. Let it melt slightly then stir to combine. Season with salt and pepper. 4. Line a large bowl with washed spinach leaves and tip the pasta over the top. Serves 2 - 4 people depending on how much pasta you use. |
