6 eggs
225g ground almonds
225g sugar
2 large oranges

Handy Hint

Allow to cool in the tin before removing


1. Put two large oranges in a bowl of water and either boil them or microwave until soft. This will take about ten minutes in a microwave or a little longer on the stove top.
Then allow to cool a little and put the entire oranges into a food processor (or rub through a sieve) and process until smooth.
2. Add the eggs one by one and mix in. Then add the almonds and sugar and mix.
3. Grease and line a cake tin about 20-22cm (8/9 inches) across and turn the mixture into it.
4. Bake at 180C for about an hour. Test with a skewer to ensure that it is cooked.
This can be served as a pudding and is, in some ways, more of a pudding than a cake.
