Ingredients

4 fish fillets (salmon, trout, bass, whatever)
3 large potatoes (peeled and sliced thickly)
Large sweet onion (cut in chunks)
Large sweet pepper (cut into chunks)
Tomato sauce or salsa (from a jar or make your own)
A few thin slices of lemon
Olive oil
Salt and pepper to taste

Handy Hint

If you like your fish hot and spicy you can add some hot pepper at the stage where you add onion and pepper to the recipe

Method

1. Put olive oil in a casserole; add thick slices of potatoes seasoned with salt and pepper. Bake 20 minutes at 400.
2. Smother with chunks of sweet onion and sweet pepper, more olive oil, salt and pepper. Bake another 20 minutes.
3. Lay fish fillets on top. More olive oil, salt and pepper. Cover with tomato sauce or salsa and a few thin slices of lemon. Bake another 15-20 minutes.
