Ingredients

2 cloves garlic (chopped)
I red chilli (chopped)
2.5cm/I" fresh ginger (chopped)
2 pak choi (sliced)
2 skinless salmon steaks (cut into bite-sized pieces)
Packet of fresh egg noodles (rinsed)
2 large handfuls fresh spinach
Soy sauce and freshly ground black pepper
1 tbsp light olive oil or vegetable oil.

Handy Hint

This is a very simple, tasty meal. If prepared beforehand it only takes a few minutes to cook.

Method

1. Heat the oil and fry the garlic, chilli and ginger for 1 minute, stirring constantly
2. Add the pak choi and stir fry for another 3 minutes.
3. Add the salmon chunks and stir fry for 2 minutes.
4. Add the noodles, keep stirring until heated though and add soy sauce and pepper to taste.
5. Finally stir in spinach until wilted.
Serve

Just as an aside what are the benefits of using pak choi as against cabbage or spinach which are must cheaper and also wilt down?

A family favourite. Contains healthy ingredients and minimum of oil used in preparation.
