Ingredients4 cloves garlic
1 large onion
12 cherry tomatoes
yellow pepper
green pepper
3 sticks celery
half a bulb fennel
can of chopped tomatoes
handful of brown lentils
can of butterbeans
smoked paprika |
Handy Hint
Use the tomato can to measure the water. Can also be cooked in a pan on hob if you don't have a slow cooker (reduce cooking to an hour). |
Method1. Peel and chop the onion and garlic and fry gently in olive oil until soft.
2. Chop all other vegetables and place in slow cooker. Add onion and garlic, brown lentils, tin of tomatoes and smoked paprika to taste. Add a further tin full of water.
Cook for five hours on high.
3. Half an hour before serving, add can of butter beans and salt and pepper to taste.
Serve with rice or pasta or new potatoes.
