Ingredients2 tbsp vegetable oil1 onion (finely chopped) 2-3 large potatoes (peeled and cut into chunks) 340g can corned beef (sliced) 2 tbsp tomato purée 2 tomatoes (chopped) 500ml beef stock 1 carrot (chopped) 1 bay leaf salt and black pepper |

Method1. Heat the oil in a large pan and fry the onion for 2 minutes.2. Add in the potato chunks and fry until lightly browned. Add the corned beef, carrot, bay leaf, tomato purée and fresh tomatoes. Pour in the beef stock and cover the pan with a lid. 3. Cook for 30 minutes till the potatoes are tender. Season with salt and pepper. |
