Ingredients

Basic cake:

115g Flora cuisine
115g white sugar (to keep mix as light coloured as possible)
2 tbsp egg replacer mixed with 6 tablespoon warm water
225g gluten free self-raising flour

Butter icing:

200g coconut butter
400g icing sugar

Method

1. To make the cake place all ingredients in a bowl and mix until combined. If too dry add some more water. Pour into a greased baking tin and cook for approx 15 mins at 160C.
Cool, preferably overnight, and then blitz in a food processor until you have cake crumbs.
2. To make the icing beat the coconut butter until soft and add the icing sugar.
3. Stir approx half of the butter icing through the cake crumbs until the mix combines and then place in the fridge for an hour or two to cool.
4. Roll into a small ball and a large ball for each snowman. Warm the butter icing slightly to make it spreadable and cover each ball in the white butter icing and assemble. Decorate so they look like snowmen.

I used tic-tacs for the orange noses and the ear muffs and an icing colour pen to create the ear muff band.

If you don't need to be dairy free you can use white chocolate to coat them.
