Ingredients

Potatoes
Butternut squash
Onion
Carrots
Celery
Parsnips (and any other veg you want to add)
Seasoning
Sage and onion stuffing mix
Veg stock cube, dissolved in a litre of hot water

Handy Hint

This is a useful way to use up left over veg from the Sunday roast

Method

1. Peel and cut the veg into equal pieces for roasting, pour a little veg or sunflower oil over and ensure all the pieces are covered.
2. Roast in a very hot oven for 30 to 40 mins till all the veg are soft.
3. Put the stock and veg into a large pan, sprinkle in 2 tbsp stuffing mix, seaon with salt and pepper.
4. Blend the soup with a stick blender, or in a conventional blender. Adjust seasoning to taste.

I discovered this tasted special when I added leftover stuffing one Christmas. Since then, I've made it many times. Delicious with crusty bread.
