Method1. Peel and cut the veg into equal pieces for roasting, pour a little veg or sunflower oil over and ensure all the pieces are covered.2. Roast in a very hot oven for 30 to 40 mins till all the veg are soft. 3. Put the stock and veg into a large pan, sprinkle in 2 tbsp stuffing mix, seaon with salt and pepper. 4.
