Blue cheese vegetable quiche recipe from joang
IngredientsReady made short pastry
1 onion (thinly sliced)
1 courgette (chopped)
1 large leek (chopped)
1 red pepper (chopped)
1 small can corn
1 tsp chilli flakes
125g roquefort or any blue cheese
3 free range eggs
2 tbsp skimmed milk
Butter or marg for greasing

Method1. Heat oven to 180C/Gas 5
2. Grease pie dish and line with pastry then prebake blind for around 10 mins or until just turning golden
3. Whilst baking gently fry all vegetables in a little olive oil until softened - around 5-8 mins - then add chilli flakes and crumbled cheese and continue to cook for 2/3 mins then spoon into pie case.
4. Beat eggs and milk together and pour over pie
5. Bake in oven until golden and firm to touch - about 20 mins Serve either hot or cold with salad or veg
