Ingredients

2 aubergines
1 tin chopped tomatoes
1 ball mozzarella
Grated parmesan
Additional grated cheddar

Handy Hint

This is always better eaten the day after. Fresh tomatoes and other cheeses can be used.

Method

1. Slice the aubergines creating circles about quarter of an inch thick.
2. Fry or roast the aubergines in olive oil so that they are cooked and soft.
3. Layer aubergines , tomatoes and cheese for two layers finishing off with a layer of cheese and grated parmesan sprinkled on top.
4. Pop in the oven for about half an hour until golden on top.
