Method1. Slice the aubergines creating circles about quarter of an inch thick.2. Fry or roast the aubergines in olive oil so that they are cooked and soft. 3. Layer aubergines , tomatoes and cheese for two layers finishing off with a layer of cheese and grated parmesan sprinkled on top. 4. Pop in the oven for about half an hour until golden on top. |
