Ingredients

225g butter
225g self-raising flour
170g rolled oats
1 tbsp golden syrup
225g soft brown OR demerara sugar
Scant tsp ground ginger
1 level tsp bicarb
1 tbsp milk

Handy Hint

Great to make with kids. Leaving the baked biscuits on the tray for a minute or two makes them a bit more chewy, lifting them off at once makes them crisp. Or is it the other way around?!

Method

1. Melt butter and syrup. Mix all dry ingredients in a bowl, add butter and syrup and milk to bind.
2. Roll in your hands to make small balls (about the size of a large walnut) and place widely spaced on a greased tray. Bake at 160C/Gas 4/325F for about 20 minutes, then cool on a wire rack.

I've been making these for years, and they're always far more popular than I expect. One day I'll try varying the recipe with cinnamon.
