Ingredients

Minced beef or lamb
2 tbsp of olive oil
2 tbsp of balsamic vinegar
2 tbsp of tomato purée
2 tbsp of Worcestershire sauce
3 cloves of garlic
25g butter
2 large leeks
2 large sweet potatoes
4 eggs
300ml single cream
100ml sour cream
Grated cheddar cheese (enough to cover )

Handy Hint

Delicious served with salad or crusty bread. Even more delicious the next day.

Method

1. Chop garlic and fry in large pan with the minced beef or lamb. Cook until browned off and then add tomato purée, Worcestershire sauce and balsamic vinegar. Sir in well and cook for about 5 minutes until sauce looks nice and sticky.
2. With a slotted spoon remove the mince mixture and set aside, leaving all the lovely sticky juices in the pan. Add the butter and the finely chopped leeks to the pan and cook until nice and soft.
3. In another pan boil the sweet potatoes until soft and then mash with the soured cream.
4. Press the leeks into the bottom of a large casserole . Top with the mince mixture and then the mashed sweet potato. Sprinkle liberally with the grated cheese until covered.
5. In a jug mix the eggs and single cream and then pour this over the top of the layers.
6. Bake in a medium oven until the eggy mixture has set and has turned a lovely golden brown. Approximately 40-45 minutes.
Delicious and a real comfort food on a winter evening.

My whole family adore this comfort food. The recipe can be adapted to feed more or less people and extra tomato purée and Worcestershire sauce added to suit individual tastes.
