Ingredients2 x 400g tinned tomatoesAt least 2 cloves of garlic (peeled and partly crushed). 8 tbsp olive oil 4 tbsp chopped fresh basil Good pinch of dried oregano Seasoning to taste |
Handy HintI usually make at least double and freeze in meal sized portions. I also use it to make Chicken Parmigiana. You can add crispy fried bacon or diced mozzarella to the sauce too. |

Method1. Heat the oil in a heavy saucepan2. Saute the garlic until it is golden 3. Off the heat add the tinned tomatoes, half the chopped basil and all the dried oregano 4. Simmer over low heat for approx 30 minutes until thickened. 5. Season 6. Stir in remaining basil just before serving. Serve with spaghetti and loads of freshly grated parmesan. |
