Ingredients

1 kg floury potatoes in bite size chunks
Knob of butter
1 onion (chopped)
200g smoked bacon (cut into small pieces (or lardons or pancetta)
125ml dry white wine
142 pot double cream (half fat cream is fine)
350g raclette cheese (grated - I use gruyere sometimes)
Smoked paprika
Salt and pepper

Handy Hint

Serve with a crisp green salad or pickled vegetables eg cornichons, onions, beetroot.

Method

1. Heat oven 200°C/gas mark 6
2. Boil potatoes for 5 minutes, drain and put into large mixing bowl.
3. Melt butter, add onion and gently fry until soft.
4. Add bacon and cook for further 5 minutes, then add to the potatoes in the mixing bowl.
5. Stir in wine, cream, most of the cheese and a small amount of paprika. Season.
6. Tip into large, buttered ovenproof dish. Sprinkle with remaining cheese, cover with foil and cook for 25 minutes.
7. Remove foil, sprinkle with more paprika and cook for 20 more minutes.
