Ingredients

4 chicken breasts
1 clove of garlic
I stock cube
1 medium size carton of single cream
2 large leeks

Handy Hint

This recipe works best when you just throw everything in....no exact measuring required.

Method

1. Chop and dice the chicken breasts then fry with the chopped garlic until sealed.
2. Put chicken and garlic in to a casserole dish then flash fry the leeks to release the flavours.
3. Add the leeks to the casserole dish.
4. Melt the stock cube in half a litre of boiling water and add to the casserole dish.
5. Stir in the single cream and cook on a medium heat for 40 minutes or until the chicken has fully cooked.
