Ingredients1 Bramley apple50g sugar 1 knob of butter 1 pinch of cinnamon For the soufflé omelette: 3 free range eggs 15ml dark rum 1 tsp caster sugar 15g butter 30ml icing sugar for dusting |

Method1. Peel and core the apple and cut into slices. Melt sugar and butter in a pan. Stir in the apple slices. Leave to cook for 1 minute to caramelise the apple. Add in the cinnamon.2. Separate the egg yolks and white. Beat egg yolks, sugar and rum together. 3. Whisk the egg white until stiff. Fold the egg white into the egg yolk mixture. 4. Heat the butter in a heavy based omelette pan until foaming. Pour the egg mixture into the pan. Cook over moderate heat for 2-3 minutes until the underside of the omelette is golden brown. 5. Place the omelette under a preheated grill until the top side is set and the omelette is light and fluffy. Place the apple filling in the omelette. Fold the fluffy omelette into half. 6. Slide the apple filled omelette on to a warm serving plate. Dust with icing sugar. |
