Ingredients4 bananas170g desiccated coconut 225g plain flour 1 tsp baking powder 1 tsp ground ginger Grated zest of 1 lemon 115g butter at room temperature 115g soft brown sugar 2 tbsp golden syrup 2 large eggs 2 tbsp rum approx 1 tbsp demerara sugar for topping |

Method1. Grease a square, loose-bottom tin or largeloaf tin 2. Mash 3 bananas, roughly chop the fourth. 3. Into a large bowl sift flour, baking powder and ginger. Add the other ingredients except bananas and coconut. 4. Mix everything together until smooth. Fold in bananas and coconut. You may need to add a little milk to give a soft consistency. 5. Spread the mixture into the tin and level the top, then sprinkle with demerara sugar. 6. Bake for 1 1/4 hours approx at 180C/160 fan. Let it cool for 5 minutes before turning out onto a wire tray. | |||||||||||||||||||
