Low carb carbonara for two recipe from Kangakate
Ingredients3 rashers sliced bacon
Handful sliced mushrooms
1 leek sliced into 1cm pieces
Low fat creme fraiche
Philadelphia/other light cream cheese
Method1. Fry the leeks, mushrooms and bacon in a little butter and oil.
2. Once cooked add a tablespoon of the cream cheese and when dissolved add a spoonful of creme fraiche and mix.
3. Heat through and add more of each to taste and so there is a nice sauce - add garlic granules to taste.
4. Once completed add the courgette using a julienne peeler as a spaghetti replacement, warm through and serve.
