Ingredients

2 tbsp good olive oil
1 yellow pepper (seeded and sliced)
450g cherry tomatoes
4 tbsp white wine vinegar
3 tbsp golden caster sugar
2 tsp yellow mustard seeds
Salt and pepper to taste

Handy Hint

A lovely salad for winter or summer, make double if you like tomatoes as it also keeps well for the next day!

Method

1. Heat the oil and gently fry the pepper for 10 minutes
2. Add tomatoes and fry for 1 minute
3. Add vinegar, sugar, mustard seeds and a little seasoning (check later and adjust if necessary) and 2 tbsp of water. Bring to the boil and boil rapidly for 5 minutes,
4. Remove from heat and serve warm or cold.
