Ingredients2 tbsp good olive oil1 yellow pepper (seeded and sliced) 450g cherry tomatoes 4 tbsp white wine vinegar 3 tbsp golden caster sugar 2 tsp yellow mustard seeds Salt and pepper to taste |

Method1. Heat the oil and gently fry the pepper for 10 minutes2. Add tomatoes and fry for 1 minute 3. Add vinegar, sugar, mustard seeds and a little seasoning (check later and adjust if necessary) and 2 tbsp of water. Bring to the boil and boil rapidly for 5 minutes, 4.
