Handy HintIt gets quite smoky so it is a good idea to open your windows and put the extractor fan on. Not a recipe to cook when young grandchildren are with you. |

Method1. Prepare the smoker by lining the bottom of a thick-based roasting tin with a double layer of foil.2. Mix all of the smoking mixture ingredients together. 3. Pour the smoking mixture into the bottom of the tray, spreading the mixture out evenly. 4. Place a rack in the tin and rub with olive oil. 5. Place the fillets skin-side down onto the rack and double seal the top with more foil. 6. Place the tray onto the gas burner, over a medium flame. The sugar will melt and start to burn the rice and the tea, creating smoke. Heat until smoke starts to appear from beneath the foil. 7. Smoke the mackerel for 6 - 8 minutes, or until the fillets are cooked through. Remove the lid and allow to cool. |
