Ingredients

4 garlic cloves
2 egg yolks
1.5 tbsp fresh lemon juice
1 cup extra virgin olive oil
Salt to taste

Method

Crack the eggs and separate the yolks into a small mixing bowl.
Crush the garlic (either with a garlic crusher or mortar and pestle) with the salt.
Whisk the garlic, salt and egg yolks together to blend them.
With a hand mixer, slowly add the olive oil until a creamy sauce forms.
Add the lemon juice gradually at the end to ensure the mixture remains smooth.

Further to my comment, I added extra garlic - in fact way more than recommended. For a double batch I used a whole bulb of garlic. My DH nearly passed out because of the smell. However... it is absolutely delicious with so much garlic in, and the flavour improves over time as well. Don't hesitate to leave it a week or two before using.

Thank you for this recipe. Mum used to make garlic mayonnaise but I can't find her recipe. This is perfect!
