Ingredients

Cake

2 cups sugar
1 1/2 cups vegetable oil
3 eggs
2 tsp. vanilla extract
3 cups all purpose flour, divided
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
3 cups peeled, diced cooking apples
1 cup chopped pecans

Filling

1 cup firmly packed brown sugar
1/2 cup butter or margarine
1/4 cup evaporated milk

Frosting

1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
4 cups sifted confectioners' sugar (approximately 1 lb.)
1 tsp vanilla
1 tbls cinnamon
2 tablespoons milk

Handy Hint

Cake needs to be cooled completely. The Caramel Filling goes between the layers. The Cinnamon Buttercream Frosting is used for around the side of the cake. If you feel creative it can be used to pipe on a decoration for the occasion.

Method

Fresh Apple Cake
1. Combine sugar, oil, eggs, and vanilla in a large mixing bowl: beat about 1 minute at medium speed of an electric mixer.
2. Combine 2 1/2 cups flour, soda, salt, and cinnamon; gradually add to sugar mixture, beating at low speed of electric mixer until blended.
3. Dredge apples and pecans in remaining 1/2 cup flour; fold into batter.
4. Spoon batter into a greased and floured round pan. Bake at 325 degrees (162C) for 1 hour and 30 minutes or until wooden toothpick inserted in centre comes out clean. Cool in pan for 15 minutes; remove from pan, let cool completely. Spread frosting over top of cake.

Caramel Filling
1. Combine all ingredients in a medium saucepan; cook over medium heat, stirring frequently until mixture comes to a boil and sugar is dissolved.
2. Continue cooking, stirring constantly, until mixture reaches soft ball stage (240 degrees).
3. Remove from heat, and beat about 5 minutes or until thick enough to spread.

Cinnamon Buttercream Frosting
1. Combine all but the milk and mixed well.
2. Add milk ½ tablespoon at a time until the consistency is spreadable.
3. Then whip on high for five minutes to make the frosting fluffy.

This is a favorite of my family. I also use it in the fall and decorate with fall colored leaves (piped on with the cinnamon buttercream) Have used for Christmas decorated with piped on holly leaves and berries. It gets better after the first day of baking. SO I bake a full day before I fill and ice. Enjoy!
