Ingredients4 egg whites
225g caster sugar
1 1tsp cornflour
1 tbsp cocoa
extra thick cream or ice cream to serve |
Handy Hint
You will scramble the egg mix when simmering if the bottom of the bowl touches the water! |
Method1. Heat the oven to 150C/fan 130C/gas2.
2. Line baking sheet with baking parchment.
3. Put egg whites and caster sugar in large heatproof bowl and sit over a pan of simmering water. Don't let the bottom of bowl touch the water.
4. Stir until the sugar has dissolved and the mix is hot to the touch. Remove from heat immediately. 5. Whisk using hand-held electric whisk for 10-15 mins. Add the cornflour and mix.
6. Sieve in cocoa powder. Lightly fold into the meringue using 2/3 strokes.
7. Spoon the mix onto baking sheet in 6 large spoonfuls.
8. Put the baking sheet in oven. Reduce heat to 120Cfan 100C/gas and cook for 1 hour, 15mins. Turn off the oven and leave to cool inside until completely cold. Serve with icecream or double cream
