Ingredients

Parsnips
175 gm flour
100gm grated Parmesan
Salt and pepper
Oil
Butter
(Multiply coating according to quantity of parsnips)

Handy Hint

Can be made in advance and kept in fridge before roasting. The coated parsnips will absorb quite a bit of the oil and butter, so don't be mean, especially if it is Christmas!

Method

1. Heat oven to 200C.
2. Mix flour, cheese and seasoning.
3. Peel parsnips and cut into even sized chunks.
Boil for 3 minutes.
4. Drain and coat in the mixture while still hot.
5. Turn in hot 50/50 oil and butter and roast for 20 minutes or until golden and crisp.
