Ingredients

Pear Mincemeat

250g dark sugar
250mls perry dry cider
1kg pears,not very soft but not very hard either, peeled,halved and chopped roughly
1/2 tsp mixed spice
1/2 tsp ground cinnamon
250g raisins
75g chopped dried apricots
75g chopped walnuts or blanched almonds
rind and juice of a lime
6 tbs of rum or brandy
4 x 500g sterilized jam jars

Handy Hint

Great to mix some into apple crumble and to spoon over vanilla ice cream too.

Method

Dissolve the sugar in large pan over gentle heat. Add pears and all other ingredients except the alcohol and simmer for 30 minutes or until everything seems pulpy. Take off heat and when its cooled slightly, stir in alcohol.
Spoon into the sterilized jars, seal and cool.
