Ingredients1 whole cauliflower500g pasta (I use fusilli) 250g mascapone 200g of grating cheese e.g cheddar 3 rashers of bacon (can be left out if vegetarian) 150g breadcrumbs Few sprigs of rosemary Drizzle of olive oil |

Method1. Preheat oven to 190 degrees.2. Cut the base off the cauliflower and discard along with any grotty outer leaves. Take off all the good leaves and cut up finely. Place in a large saucepan with the pasta, and the cauliflower which should be cut into 4. 3. Cover with boiling water and a good pinch of salt, cook as per the pasta packet instructions (usually 10-12 mins) 4. Place the rashers of bacon into a large oven-proof rectangle dish dish and place into the oven, once cooked remove the rashers and place in a food processor along with the breadcrumbs, rosemary and a drizzle of olive oil, pulse until it is all mixed and chopped. 5. Drain the pasta and cauliflower but reserve approximately a pint of the cooking water. Place all into the dish and use a fork to break up the cauliflower into bite size pieces. 6. Mix in the mascapone, cheddar and season well. 7. Top with the bacon breadcrumb mixture and cook until golden - 10-15 minutes. Enjoy!! | |||||||||||||||||||
