IngredientsFor the shortcrust pastry6ozs self raising flour 2oz butter 2oz trex or similar Salt Cold water 1oz mixed seeds. For the filling: 3 eggs 2oz Stilton 2 floz cream plus a splash of milk 2oz cashew nuts Seasoning 1 chilli finely diced |
Handy HintI find that using self raising flour for the pastry makes a lighter result. |

Method1. Make pastry adding seeds to mixture before adding water.2. Line a quiche dish and bake blind. 3. Grate cheese and sprinkle on base together with diced chilli. 4. Top with cashew nuts. 5. Mix eggs, cream, milk and seasoning and pour over. 6. Cook in a preheated oven at around 180* for about 30 minutes or until golden. Serve with baby leaves. |
