Ingredients

5 ozs. plain flour,
5 ozs. self raising flour
5 ozs. trex
2 large bramley cooking apples
Sugar to sweeten
Icing sugar
Dessicated coconut

Handy Hint

Handy to cook in a quiche dish or a glass casserole dish with a lid. Can be frozen so no waste

Method

1. Cook the apples in small amount of water, sweeten to your taste.
2. Rub fat into flour, mix to a stiff dough with cold water.
3. Roll out to line a 8 inch shallow pie dish, put in apple, roll out pastry topping, cover pie and cook for approximately 40 minutes at 160C.
4. When cold, cover with a layer of icing and a thick sprinkling of coconut. Serve on its own or with ice cream or cream.
