Ingredients

200g chicken breast (diced)
1 onion (chopped)
1 clove garlic (chopped)
1 red chilli (chopped)
1 teaspoon soy sauce
50 cashewnuts (toasted)
1 teaspoon cornflour
2 tablespoon cooking oil
Salt and pepper

Method

1. Marinate chicken in salt,pepper and cornflour for 10 minutes.
2. Heat oil in a frying pan. Sweat garlic and onion for 2 minutes without browning. Add in chilli and fry for another minute.
3. Add in dice chicken and fry till the chicken change colour. Add in 2 tablespoon of water Cover and simmer for 10 minutes. Add in soy sauce. Stir well season to taste. Stir in the cashew nuts. Serve hot with steamed rice.
