Ingredients

100g soft noodles
1 carrot (sliced)
10 slices asparagus
2 tbsp green cabbage
2 tbsp white cabbage
2 tbsp beansprouts
1 cup vegetable stock
1 cup coconut milk

For the chilli paste:
1 red chilli
5 shallots
1 clove garlic
1 piece galangal
1 stalk lemon grass
1 tsp curry powder
1 tbsp lemon juice
½ tsp brown sugar
2 tbsp sunflower oil
Salt and pepper

Method

1. Put chilli paste ingredients in a grinder and grind to a paste. Heat oil in a pan and fry chilli paste till light brown.
2. Add in all the vegetables and fry for 5 minutes. Add in vegetable stock, coconut milk and noodles. Heat through and season to taste.
