Ingredients

Suitable for a turkey up to about 10 pounds in weight:
10lb turkey, thawed well if using frozen.
5oz table salt
5oz caster sugar
2 tbsp allspice berries
4 star Anise
4 cloves
1 bouquet garni
1 stick of cinnamon
2 tbsp mustard seeds
2 tbsp caraway seeds
2 tblsp Black peppercorns
1 orange, cut into slices
3 tbsp maple syrup
3 tbsp honey
2 onions, peeled and cut into large chunks
2.5 inches of fresh ginger sliced

Handy Hint

You can do chickens this way too just adjust the ingredients to the size of the chicken.

Method

1. Put about 6 pints of cold water into a very clean plastic bucket add all the ingredients and stir well.
2. Put the turkey into the bucket, having undone any ties first.
3. Top up with further cold water to make sure the turkey is covered.
4. Cover and keep in a cold place for 2-3 days turning the turkey everyday.
5. When ready to cook remove the turkey from the bucket and dry well.
6. Roast as you would normally but checking that the juices run clear before you remove it from the oven.
7. Let it stand for about 30 mins before serving your scrummy Turkey.
The effort is really worth it. Enjoy!

This recipe will make the cheapest of poultry taste as good if not better than the fancy expensive Turkeys! The ingredient list seems long but the remainder of the spices etc can be used another year or even two!
