IngredientsFor the cake8oz carrots, peeled and finely grated. 2oz chopped walnuts 2 eggs 6oz caster sugar 6 fl. Oz vegetable oil 1 tbls lemon juice 6oz self raising flour 1 teaspoon baking powder ½ teaspoon bicarbonate of soda ½ teaspoon mixed spice (1 teaspoon cinnamon + ½ tsp nutmeg) ½ teaspoon salt For the butter cream 4oz soft cheese 2oz butter Vanilla essence 2oz icing sugar Orange zest |

MethodCake1. Cream together the eggs and sugar. 2. Add the oil to the egg mixture and beat further. 3. Beat thoroughly until thick and smooth, then add the lemon juice. 4. Sift the dry ingredients into the mixture and mix well. 5. Add the grated carrots and chopped nuts and mix thoroughly. 6. Divide between two well greased 8” cake tins and cook on gas mark 4 for 25-30 minutes until firm (180 degrees C electric oven). 7. Remove from tins and leave to cool. Butter Cream 1. Mix all the butter cream ingredients together. 2. Spread half the mixture between the two cake halves to stick the cake together. 3. Spread the rest of the mixture on top of the cake. |
