Vegetable stew recipe (vegan) from granin
Ingredients-4 tbsp olive oil
-4/5 cloves of garlic (depending on how much you like it!)
-2 peppers (red, orange or yellow work best)
-2 medium potatoes
-can of chopped tomatoes
-can of chickpeas
Method-preheat oven to 220C/gas mark 7
-dice, then roast all of the vegetables with the garlic, drizzling them with olive oil, sea salt, black pepper and any other flavourings you'd like to use.
-when they're nice and brown, transfer the vegetables from the roasting tin to a deeper dish.
-add the tomatoes and chickpeas and simmer for a further 10/15 minutes (add more seasoning here, to taste)
