Ingredients125g plain flour
1 medium egg (beaten)
300ml semi-skimmed milk
cooking oil
1 tsp icing sugar
zest of half an orange
juice of 2 small oranges
40g caster sugar
40g butter
2 tbsp Cointreau
2 tbsp brandy
crème fraîche |

Method1. Make pancakes using a basic pancake recipe, but add icing sugar and some of the grated orange peel (zest).
2. Fold pancakes and set aside.
3. Melt butter in a frying pan and dissolve the caster sugar and cook until golden. Add the orange juice, and stir in the Cointreau when it starts to simmer.
4. Add folded pancakes to the pan, add brandy, then set the mixture alight.
5. Remove from the heat while the flames die down.
6. Serve with orange zest and Crème fraîche.
