My basic vegetable soup recipe from Stansgran
Ingredients170g (6oz) courgettes (about 3 small)
113g (4oz) celery (about 2 sticks)
113g (4oz) carrot
A bunch of spring onions
1 clove of garlic (crushed)
85g (3oz) cabbage/cauliflower
1½ litres chicken stock
3tbsp tomato purée
227g (8oz) cooked pasta
Handy HintI vary this with cartons of tomatoes with herbs and substitute leeks for the onions or whole onion. I also add rinsed tinned beans or start with pancetta cubes if I'm not on a low fat diet. Rice for pasta works but the veg proportions work for me.
Method1. Chop everything to sizes you like.
2. Throw everything in except the pasta.
3. Add pasta when vegetables are tender.
