Ingredients170g (6oz) courgettes (about 3 small)113g (4oz) celery (about 2 sticks) 113g (4oz) carrot A bunch of spring onions 1 clove of garlic (crushed) 85g (3oz) cabbage/cauliflower 1½ litres chicken stock 3tbsp tomato purée ¼tsp basil ¼tsp thyme 2 peppercorns 227g (8oz) cooked pasta |
Handy HintI vary this with cartons of tomatoes with herbs and substitute leeks for the onions or whole onion. I also add rinsed tinned beans or start with pancetta cubes if I'm not on a low fat diet. Rice for pasta works but the veg proportions work for me. |

Method1. Chop everything to sizes you like.2. Throw everything in except the pasta. 3. Add pasta when vegetables are tender. |
