Ingredients

1 clove garlic, minced (I use the lazy stuff, because I am)
3 tablespoons olive oil
Small jar anchovy fillets
16-ounce of chopped Italian cherry or plum tomatoes
2 tablespoons chopped parsley

Method

Brown the garlic in the oil over a low heat. Add the anchovies and stir till they melt into the oil.

Add the tomatoes and bring the sauce to a boil. Simmer, uncovered, for 20 to 25 minutes. Check seasoning. In the meantime, cook your pasta. Toss with the sauce and sprinkle with parsley. Serve immediately.

I love this sauce from Northern Italy, so simple but so tasty. I first read about it in Anthony Capella's book, The Wedding Officer. Apart from being a great read, this book has loads of quick and easy Italian cookery ideas.
