1kg peaches
800g jam sugar
2 lemons - zest and juice
1 vanilla pod

Handy Hint

I let it cool down a bit before bottling so that the fruit doesn't rise to the surface


Peel and stone the peaches and cut up the flesh,then add the lemon zest and juice. Put in a large saucepan or preserving pan and cook for 15 minutes. Add the sugar, stir until dissolved then boil until setting point is reached. Scrape out the vanilla seeds and stir in. Put into sterilised jars ..... Label ..... Give one jar to your friends/family and enjoy the rest!

Delicious result - great to try when you can find abundant, cheap peaches. (I bought a kilo for £1)
