Ingredients

6 carrots
3 courgettes
2 tblsp sunflower oil
4 tblsp sesame seeds
1 tsp sesame oil
4 cloves garlic, crushed or grated
juice of half a lime
1 tblsp dark soy sauce
1 fresh red chilli, deseeded and finely shredded
2-inch chunk of ginger, peeled and grated
400g raw prawns
Coriander leaves to serve.

Method

1. Marinate the prawns in half the oil, the chilli and ginger for at least half an hour.
2. In the meantime, spiralise the carrots and courgettes.
3.Heat a wide pan with remaining oil and add courgettes, carrots, sesame seeds, sesame oil, garlic, lime juice and soy sauce. Mix.
4. After a few minutes, add the prawns and their marinade and continue to stir-fry for a couple of minutes until the prawns turn pink. Serve with fresh coriander leaves, roughly chopped.
