Ingredients6 carrots3 courgettes 2 tblsp sunflower oil 4 tblsp sesame seeds 1 tsp sesame oil 4 cloves garlic, crushed or grated juice of half a lime 1 tblsp dark soy sauce 1 fresh red chilli, deseeded and finely shredded 2-inch chunk of ginger, peeled and grated 400g raw prawns Coriander leaves to serve. |

Method1. Marinate the prawns in half the oil, the chilli and ginger for at least half an hour.2. In the meantime, spiralise the carrots and courgettes. 3.Heat a wide pan with remaining oil and add courgettes, carrots, sesame seeds, sesame oil, garlic, lime juice and soy sauce. Mix. 4. After a few minutes, add the prawns and their marinade and continue to stir-fry for a couple of minutes until the prawns turn pink. Serve with fresh coriander leaves, roughly chopped. |
