Ingredients4 chicken breasts, cooked and chopped150g mayonnaise large bunch spring onions, white parts finely chopped, green parts roughly chopped for garnish 1 large mango, chopped 150g crème fraiche 2 tblsp dried apricot, finely chopped 2 tblsp mango chutney 2 tblsp pine nuts 1 tblsp sultanas, soaked in warm water juice of 1 small lemon salt and pepper to taste |

MethodIn one bowl, place the chicken pieces, mango pieces and the white part of the spring onion, finely chopped.In another bowl, combine the mayonnaise, crème fraiche, lemon juice, salt and black pepper. Add to the mayonnaise/crème fraiche mixture the dried fruit, chutney and pine nuts. Mix to combine. Add this to the chicken/mango mixture, mix gently and serve with the reserved green spring onion, shredded or finely sliced. |
