Ingredients

1 tin lentils or equivalent split peas
1 corn on the cob, boiled or roasted
Red and yellow peppers, thickly sliced and roasted
Cherry tomatoes, halved (optional)
Fresh parsley or coriander
Oil and red wine vinegar
1 tblsp sweet chilli sauce
Salt and pepper to taste

Method

-Drain the tin of lentils
-Slice the cooked corn into rounds about half a centimetre thick while still warm from cooking
-Add above to serving dish along with peppers, still warm from oven.
-Add all other ingredients and mix well
-Serve with warm, crusty bread
