Ingredients1 tin lentils or equivalent split peas1 corn on the cob, boiled or roasted Red and yellow peppers, thickly sliced and roasted Cherry tomatoes, halved (optional) Fresh parsley or coriander Oil and red wine vinegar 1 tblsp sweet chilli sauce Salt and pepper to taste |

Method-Drain the tin of lentils-Slice the cooked corn into rounds about half a centimetre thick while still warm from cooking -Add above to serving dish along with peppers, still warm from oven. -Add all other ingredients and mix well -Serve with warm, crusty bread |
