Ingredients55g butter1 chopped onion 3 sliced leeks 225g potatoes cut into approx 2cm cubes 850ml veg stock Salt and pepper To serve optional- 150ml single cream and snipped chives |

MethodMelt butter in large pan over medium heat. Add onion, leeks and potatoes. Gently sauté for a couple of minutes until soft not brown.Add stock, bring to boil, then simmer for 15 minutes.Blend until smooth in blender or food processor. Heat in a saucepan, season to taste.
